A healthy and decadent pumpkin pie that tastes amazing with a fruit topping or cool whip.
This is a cheese enchilada casserole. Beans, cheese, onions, Mexican chile sauce (not very spicy) and corn tortillas are layered in a casserole and then it's baked in the oven until bubbly.
I used lightly-toasted flaked coconut instead of the nuts and baked it in a 9-inch spring form pan. YUM!
