Ingredients

1 pound alligators sausage, crumbled, browned, drained
1 pound crawfish tails
1 pound smoked sausage sliced
2 cups rice, converted long-grain
10 ounces tomatoes, canned with chiles
1 can soup, french onion
1 can beef broth
1 bunch scallions, spring or green onions chopped
1 pound mushrooms sliced
10 ml garlic minced
2 each bay leaves
1 tablespoon creole seasoning
1 tablespoon black pepper
1/4 pound butter or margarine

Directions

Mix alligator sausage with remaining ingredients.

Place in a covered casserole or pan and cook in preheated 350~ oven for 1 hour.

After 30 minutes, stir well and continue cooking for the remaining time.

Let cool, uncovered, for a few minutes and serve.

Baba Ganoush

This was FANTASTIC!! I am not a huge fan of eggplant, but I recently tried baba ganoush at a restaurant. I really, really liked it so I had to find a recipe to try at home. This was a huge success. Very easy recipe to make and very, very tasty!!
