Spinach and Feta Frittata recipe
This Pasta Salad with Cucumber, Tomato, and Feta was not something I had planned on blogging about. It merely came about because I had nothing to cook for dinner, save a package of gluten-free pasta I had picked up for emergencies and a variety of veggies from my CSA. Then my husband loved it so much that he had two helpings, and he insisted that I write about it. I’m trying to move my family towards a more grain-free existence, but sometimes I just don’t have it in me to think gourmet. Sometimes, we do the best that we can. All this is my way of saying that the amounts of ingredients here are really just approximations. I have no idea what exactly I put in here to make it taste so yummy. You’ll have to channel your inner Italian grandma, and just mix in ingredients until the food tastes good.
This year I switched CSAs, to one that was a bit more fruit-heavy (so I thought). It turns out, this CSA share is 75% fruit, leaving me with a whole heck of a lot of peaches. I had saved this recipe for Oven Roasted Peaches from Real Fit Mama, but it turns out that I totally bungled my grocery list, and didn’t have most of the ingredients.
Found this recipe in donna hay magazine, and I just happened to have all the ingredients this recipe called for. I did make a few changes and cook it differently. The frittata came out delicious, but next time I will cook it on the stove top first to give a nicely browed bottom, then broil at the last a few minutes.

This is a quick, easy and economical recipe, and it was very tasty too. Feta cheese and black olives gave the dish the Mediterranean flavor. Using spaghetti squash lowered the carb and calorie intakes. Definitely will make it again.
So delicious, and packed with goodness. If you don't have quinoa, use brown rice or regular white rice. A very tasty way to cook with seasonal colourful bell peppers, and they are so good for you as well.
