Quiche cups are about the easiest, quickest, most portable paleo dish out there. And I can’t get enough. These bacon, apple, and kale cups are scrumdiddlyumptious, and the pear and ginger ones are pretty good too. I suppose it depends on your palette. Ginger is not my flavor of choice. Lesson learned. These zucchini cups have, oh…3 ingredients. Plus salt and pepper. Plus they’re Portable, Paleo and Parent-approved. It’s a trifecta of Pleasant Perfection (or healthy Progress).
Simply Incredible!!! I have never had a quiche recipe work for me. They always end up a soupy mess and leave me frustrated and dejected. This one turned out so wonderfully and gorgeous - pretty enough for company. It tasted fantastic. I used a quiche pan instead of a 9" pie pan(as I said I never had one turn out, but it doesn't stop me from trying) ;-) If you like chorizo and want to try a quiche recipe that is totally fool proof - THIS IS THE ONE!!! Yummy!!! I'd give it 10 stars if I could.

I did not list any spices, as I usually have self made chicken broth which is already pretty tasty and spicy, sweetness comes from the onions and the white wine balances it. For bread and cheese - don't think about any fancy, old dry bread is good and any cheese which melts. The onions are king when it comes to taste. Ovenproof crock bowls are very nice for final preparation and serving the soup.
