Happened to have all the ingredients this recipe asked for on hand, so this was our dinner yesterday. It was quite easy to make, I didn't have green bell pepper, so I used 1 zucchini and 1 jalapeno pepper instead. I used whole wheat macaroni, homemade tomato sauce, soaked and boiled kidney beans instead of canned in order to control the amount of salt. But canned beans are perfectly ok, just make sure to well rinse them. This recipe is easy to scale down as well. A filling, tasty yet wholesome one pot meal that's perfect for busy week days.
