One of my favourite things to have for a meal is Sindhi curry with plain boiled rice accompanied by crispy vegetables. The Sindhi Curry is by far the nicest curry I’ve had. Sour, spicy and tangy – some of the flavours I’m especially biased towards. This is also good because I end up eating a variety of vegetables.

Chickpea flour is naturally gluten free, chickpeas are a super source of protein, fibre and iron. The skin of vegetables and fruit are quite often a good source of nutrition in itself, the dark skin of the Zucchini/courgette is high in soluble fibre which slows digestion and stabilises sugar levels. Just made this roasted curried cauliflower for lunch, and it was very tasty. Loved how sweet the onions came out after the roasting with the strong caramelized flavor as well, yum. The cauliflower florets were tender with a little bit crisp, perfect texture :)
