Made this apple cake a while ago, and finally got the photos uploaded. The cake was moist and delicious. I used half whole wheat flour and half all-purpose flour to make it a bit healthier, reduced sugar to 1 1/2 cups, which was sweet enough for us. Also added 1/2 cup chopped pecans to the apples, and it was a great addition.

A hearty vegetarian version of my favorite soup. It's easy to make it vegetarian by using roasted vegetable stock instead of beef stock. By adding a leftover parmesan rind (I save them in the freezer for this soup) it adds extra flavor. (optional)
Quite tasty and filling. I used black bean instead of pinto beans, I also squeezed half of the lime juice into the dressing, and I omitted the tomatoes that I didn't have on hand. I did think a ripe yet juice tomatoes would add more great flavor. Served it on a bed of lettuce and home-baked tortilla chips.
