In a surprising twist, Tuscan kale is served raw—and makes for a substantial and satisfying fall salad. Sweet currants (or raisins) soaked in tangy white balasmic vingegar and salty parmesan punctuate the dressed, shredded kale.
An interesting fact is that wild rice isn’t actually rice, but a seed that is produced by some types of aquatic grasses in North America. There are many benefits, one of which is that these seeds contain high levels of antioxidants which neutralize free radicals. Free radicals are the by-products of cellular metabolism and they have the potential to turn healthy cells cancerous. Wild rice has a substantial amount of Vitamin C which repairs cells, tissues, organs and gives the immune system a boost. It has high levels of fibre which clears out bad cholesterol and also aids the digestive system. We think there are enough reasons here to go wild!

Quick, easy and tasty. Fresh lemon zest and juice add lots of refreshness, a few garlic cloves give the fragrance, and the toasted almonds bring some nutty taste and another layer of the crunch texture. Serve it with any main course.
The combination of honey and the nuts make this cole slaw the best. This is my husbands favorite coleslaw, when I first made it he just went on and one about how good it was. I got the recipe from my Aunt. I'm guessing about 5 weight watchers points per serving.

This Pasta Salad with Cucumber, Tomato, and Feta was not something I had planned on blogging about. It merely came about because I had nothing to cook for dinner, save a package of gluten-free pasta I had picked up for emergencies and a variety of veggies from my CSA. Then my husband loved it so much that he had two helpings, and he insisted that I write about it. I’m trying to move my family towards a more grain-free existence, but sometimes I just don’t have it in me to think gourmet. Sometimes, we do the best that we can. All this is my way of saying that the amounts of ingredients here are really just approximations. I have no idea what exactly I put in here to make it taste so yummy. You’ll have to channel your inner Italian grandma, and just mix in ingredients until the food tastes good.
Super quick, easy to make, and it's creamy and delicious with some nice crunch and freshness.
