We love the Hot and Sour soup at Lettuce Wok 'n Roll, our local Chinese restaurant, and this is my attempt to re-create their delicious concoction. Sorry that the amounts are inexact. I didn't measure very carefully when I started making the soup.

It is corn season, so many fresh and sweet corn, we use them with sour cream and red pepper, some scallions and fresh cilantro, give the corn very rich flavor, and this is a very healthy way to cook corn too, enloy summer and corn!
Very good! The recipe was fairly easy to make. I used miso paste and a very flavourful vegetable stock base, which gave the soup a great depth of flavour. Served soup with brown rice, and it was delicious yet filling and packed with goodness.
