Blend light rum with fresh lime juice, superfine sugar, and your favorite tropical fruit for a frozen daiquiri that’s miles ahead of anything from a bottle.
The recipe is wildly flexible: use passion fruit for tart, floral intensity, mango for lush sweetness, papaya for something mellow, or guava for a punch of pink tropical funk.
Bartender Tips
- Use superfine sugar so it dissolves instantly in the cold blender. Regular granulated sugar can leave a gritty texture.
- Crush the ice before adding it. Smaller pieces blend smoother and give you that slushy frozen consistency.
- Strain passion fruit daiquiris through a fine mesh sieve to catch the seeds.
Ingredients
Directions
Put rum, lime juice and sugar into blender or food processor.
If using passion fruit, cut in half, scoop out pulp and add to blender.
If using guavas, peel, chop and add to blender.
If using mangoes, papayas or pepinos, cut in half and scoop flesh (not seeds) into blender.
Purée until smooth.
(Strain out seeds if using passion fruits.)
Add ice to puree.
Process until smooth.
Taste for sweetness.
Pour into glasses and garnish with lime or kiwi.
