Ingredients

1 pint cherry tomatoes
finely chopped

1 clove garlic
small clove, finely chopped
¼ cup basil
fresh, chopped

¼ pound mozzarella cheese
fresh, 1/4-inch thick slices
2 tablespoons lemon juice
fresh
4 tablespoons olive oil
salt and black pepper

4 slices bread, italian
toasted, prefer whole wheat or whole grain

Directions

Preheat broiler.

In large bowl combine tomatoes, garlic and basil. Stir in lemon juice and olive oil. Season with salt and pepper.

Top toasted bread with the mixture and a slice of cheese and place on baking sheet. Broil until cheese melts.

Serve hot.

You can put it on the toast, you can top the pizza with it, or as a light, tasty and refreshing side dish.
