Directions

Brown the ground beef or turkey with chopped bell pepper, onion, and mushrooms in a large skillet.

Stir in the tomato paste, water, and corn.

Prepare the macaroni and cheese mix according to the package directions, adding milk and butter or margarine as directed on the box.

Combine the macaroni and cheese with the beef, mushroom and vegetable mixture.

Mix well and serve.

Top with addtional shredded cheese if desired. Other toppings might include finely Jalapeño peppers, shredded lettuce, or cilantro.
