This version leans diabetic-friendly, pulling its sweetness from sugar-free lemon Jell-O tinted green with a drop of food coloring, suspended crushed pineapple, a middle layer of whipped topping folded into cream cheese, and a golden pineapple-juice custard sweetened with no-sugar packets.
The custard layer is what separates Stewart’s from every other pineapple fluff on the circuit. Cooked pineapple juice thickened with flour and egg yolks gives it a tangy, silky finish that plays against the airy cream cheese middle. Drop it by spoonfuls and spread gently so you don’t tear the fluffy layer underneath.

- Drain the crushed pineapple thoroughly. Wet pineapple waters down the Jell-O and stops it from setting firm.

Ingredients
Directions
Mix Jell-o, food coloring, and drained pineapple.
Pour into a 9 x 13-inch pan and chill until firm.
Blend the cream cheese and Dream Whip together.
Spread over chilled Jell-o layer.
Chill.
Cook third layer ingredients until thick; then cool.
Drop by spoonfuls over second layer and spread carefully.
Keep chilled until ready to serve.
