1 hrsIf you’ve ever had funeral potatoes, you already know this kind of magic. Now add SPAM.
Frozen hash browns get mixed with cubed SPAM, shredded cheddar, sour cream, cream of chicken soup, milk, onions, and diced green chilies for a little Southwestern warmth.
Pour it all into a baking dish and crown it with crushed potato chips that bake into a salty, crunchy golden crust.
It’s the kind of casserole that feeds eight and leaves zero leftovers.
Pro Tips
- Thaw the hash browns just enough to break them apart. If they’re fully thawed, the casserole can turn too soft.
- Crush the potato chips coarsely, not into dust. You want visible chip pieces for real crunch.
- Diced green chilies add flavor, not fire. Keep them in even if you don’t like spicy food.
