Shrimp Johnny
This deliciousness came about when my neighbor Johnny brought over a ton of veggies from his garden one summer. This is a light but flavorful dish that is probably one of 6 year olds favorite meals. I serve it over rice but I'm sure it would taste great with a pasta too. As far as measurements, I'm terrible at measuring and usually just throw in as I go, so use as a guide and get creative while cooking!

4 zucchini (cut in chunks)
5 or 6 yellow squash (cut in chunks)
2 large tomatoes (diced)
2 pounds of shrimp
1 Large Onion
1 Bell pepper
1/2 cup butter
Any seasoning you like: I used salt, pepper, garlic powder and Slap Ya momma
1 1/2 cups rice
Ingredients

Directions
1) Melt butter in pan 2) Sauté onions and peppers until soft 3) Wash, dry and season shrimp and veggies 4) Add shrimp, zuchinni, squash, and tomatoes 5) Cook covered for about 30 min on medium heat until all veggies are soft and shrimp is fully cooked; stir occasionally 6) Serve over cooked rice (according to rice package) and Enjoy
