Ingredients

2 pounds herring

1 cup water
2 cups apple cider vinegar
¾ cup sugar
5 each hot chili peppers
dried

5 each bay leaves

cup olives
pitted
*
2 teaspoons coriander seeds
1 ½ teaspoons mustard seeds
1 each carrots
scraped
1 each onions
sliced
30 each black peppercorns

Directions

Bring the water, vinegar, and sugar to a boil.

Cook until sugar is disolved.

Remove from heat and set aside.

In 2 large Mason jars layer the remaining ingredients.

Be sure to distribute the spices evenly throughout the layers.

Pour the mainade evenly over the contewnts of each jar.

Screw the lids on tightly, place into the refrigerator for 5 to 7 days.
