No-bake peanut butter Rice Krispies cookies are pure 1970s lunchbox nostalgia, the kind of cookie a grandmother kept in a cookie jar shaped like an owl. Just four ingredients: sugar, white corn syrup, peanut butter, and crisp rice cereal. No oven, no mixer, no patience required.

The magic is in the moment the syrup hits the right temperature. As the sugar melts and the peanut butter dissolves, the mixture turns glossy and pourable. Pour it over the cereal too cool and it stays sticky, too hot and it scorches the cereal and turns brittle. Pull it off the heat the moment the sugar dissolves, and you’ll get the right balance of chewy and crunchy.

Drop spoonfuls onto wax paper and chill until set. Twenty-four cookies done in under an hour, no dirty mixing bowl in sight.

Kitchen Tips

  • Use creamy peanut butter for a smooth coating that grips every grain of cereal. Chunky leaves dry pockets where the syrup didn’t reach.
  • Don’t substitute pancake syrup for the corn syrup, the chemistry isn’t the same. Pancake syrup contains water that crystallizes the cookies into a grainy mess instead of glossy.
  • Work fast once the cereal is coated. The mixture firms up rapidly as it cools, and getting clean drops onto wax paper takes a quick hand.
