The magic is in the moment the syrup hits the right temperature. As the sugar melts and the peanut butter dissolves, the mixture turns glossy and pourable. Pour it over the cereal too cool and it stays sticky, too hot and it scorches the cereal and turns brittle. Pull it off the heat the moment the sugar dissolves, and you’ll get the right balance of chewy and crunchy.
