Ingredients

4 each plantains
peeled and sliced

¼ teaspoon salt
1 teaspoon curry powder
½ teaspoon cinnamon
teaspoon cloves

1 ½ cups coconut milk

Directions

Combine all ingredients except coconut milk in a heavy pot.

Pour in 1 cup coconut milk and simmer over a low heat until the plantain is tender and milk is absorbed.

Add more milk if necessary. Serve hot.
