This avocado pesto is so creamy, tasty and refreshing. Toss the pasta with it to make a quick, wholesome and delicious week-day meal.

Ingredients

12 ounces pasta, linguine
prefer whole wheat
2 large avocados
or 3 small

3 cloves garlic
chopped
3 tablespoons lemon juice
2 tablespoons olive oil, extra-virgin
toasted, or walnuts
1 cup cilantro
fresh with thin stems
¼ cup pine nuts
toasted, or walnuts
cup Parmesan cheese
plus more for serving
1 x salt and black pepper
to taste

Directions

Cook pasta according to package directions until al dente.

Meanwhile, add avocados, garlic, lemon juice, oil, cilantro and nuts in food processor.

Process until smooth, about 1 minute.

Season with salt and black pepper to taste.

Drain pasta and transfer to a large serving bowl.

Pour pesto over pasta, toss until well coated.

Sprinkle with more Parmesan.

Serve warm.
