This cheese log is a party appetizer classic for good reason. A full pound of cream cheese beaten with 10 ounces of sharp cheddar creates a rich, smooth base that you season with Worcestershire sauce, lemon juice, chopped red pepper, onion, and a dash of red pepper flakes. Chill it overnight, shape it into a log, and roll it in chopped pecans and parsley.

The overnight chill is essential, not optional. Freshly mixed, the cheese is too soft to hold a log shape. Several hours in the fridge firms it enough to roll and coat without sticking to your hands. The flavors also meld during this time. The Worcestershire and lemon juice need time to permeate the cheese mass so you taste them in every bite instead of in random pockets.

Sharp cheddar is the right call here. Mild cheddar disappears into the cream cheese and you’d never know it was there. Extra-sharp or aged cheddar gives the log a tangy bite that cuts through all that richness.

The pecan coating adds crunch and a buttery, toasted flavor that pairs naturally with the cheddar. Press the nuts gently into the surface so they stick without crumbling off when you slice.

Pro Tips

  • Bring the cream cheese fully to room temperature before mixing. Cold cream cheese leaves lumps that won’t beat out.
  • Wet your hands slightly when shaping the log. The cheese mixture is sticky even when chilled.
  • Slice with a sharp, thin knife dipped in hot water for clean rounds that don’t squish the log.
  • This can be made up to 3 days ahead, wrapped tightly in plastic. Add the nut coating just before serving so it stays crunchy.

Variations

  • Dried beef coating: Roll the log in finely chopped dried beef instead of pecans for a savory, salty exterior.
  • Toasted almond version: Swap pecans for toasted chopped almonds and add a pinch of smoked paprika to the cheese mixture.
  • Football shape: Shape into a football and add pimento strip lacing for game day presentation.
