Empty starEmpty starEmpty starEmpty starEmpty star

Chocolate chip cookie pie bakes a gooey, buttery cookie dough filling loaded with chocolate chips right inside a flaky pie crust. Dense, fudgy, and warm from the oven, it tastes like eating chocolate chip cookie dough by the slice.

Imagine the soft, gooey center of a chocolate chip cookie baked into a pie, and you’ve got the idea. This is a dense, buttery, chocolate-studded filling poured into a flaky crust, the kind of dessert that’s almost indecently rich.

Texture is everything here, and it comes down to a couple of moves. Beating the eggs until foamy first gives the filling a little lift so it isn’t leaden. The flour is just enough to set it into a sliceable, fudgy middle rather than a cakey one, so it stays gooey like underbaked cookie dough. Melted butter carries that classic rich, cookie-like flavor throughout.

Pour it into an unbaked pie crust and the crust bakes alongside the filling over the long, slow hour, turning golden and flaky while the center sets to barely firm.

Serve it warm and a little molten, ideally with a scoop of vanilla ice cream melting over the top.

Pro Tips

  • Beat the eggs until foamy before adding the rest. It lightens the dense filling just enough.
  • Bake low and slow the full hour so the center sets without the crust over-browning; tent it with foil if the edges darken too fast.
  • Let it cool slightly before slicing, or serve warm and gooey straight up with ice cream.

Variations

  • Use a mix of semisweet and dark chocolate chips, or stir in chopped pecans or walnuts.
  • Add a splash of bourbon for a Derby-pie-style version.
  • Sprinkle flaky salt over the top before baking to balance the sweetness.
