37 minNo stovetop, no oven, no fuss. This zucchini frittata cooks entirely in the microwave in about 12 minutes, making it one of the fastest egg dishes you can put together. Chopped zucchini, onion, and garlic soften first in olive oil, then seasoned eggs with basil, oregano, and grated Parmesan get poured over and cooked in stages until just set.
The two-stage microwave approach matters. Cooking the vegetables first ensures they’re tender before the eggs go in. Then the egg mixture cooks at a lower power (medium-high instead of full), which prevents rubbery, overcooked edges while the center catches up.
Stirring partway through, moving the cooked outer edges toward the center, is the key technique. Microwaves cook from the outside in, so this redistributes the heat for even cooking throughout. Let it rest five minutes after microwaving. The residual heat finishes setting the center without overcooking.
Chef Tips
- Use a round dish, not square. Round shapes cook more evenly in the microwave without hot corners.
- Leave the zucchini unpeeled. The skin adds color and holds its shape better than the soft flesh.

Directions
In a 9” microwavable quiche dish or round cake dish combine oil, onion, garlic, zucchini and pepper. Stir to coat veggies with oil.
Microwave, uncovered on high (%100) for 4 to 6 minutes or until softened, stirring part way through.
Lightly beat eggs with seasoning; stir in cheese.
Pour egg mixture over vegies; stir until mixed.
Microwave, uncovered on medium high (%70) for 3 minutes.
Stir mixture with fork, moving outer cooked parts toward center. Microwave on medium/high for 3 to 5 minutes or until frittata is set.
Let stand flat on counter 5 minutes before serving.
Makes four servings.
