Linda brought these to me as a welcome gift when we first moved to North Carolina. The daycare kids love them--so does everyone else! Pay attention to the preparation method. It makes a big difference when you prepare these correctly.

Combine:
1 1/2 c flour
1 c sugar
1/2 t salt
1 t baking soda
cut in with a pastry blender
1/2 c butter
in a small bowl puree
3 bananas (1 cup)
Add bananas to flour mixture.
Beat 2 eggs until foamy.
Add everything together and stir until just moist.
Fold in 1 c chocolate chips

Makes 12 large muffins. Bake 20 to 25 minutes in 350℉ (180℃) oven.
For added deliciousness, shake cinnamon sugar on top before baking.
