Jodi’s cheesy potatoes layer frozen hash browns with a creamy soup, sour cream, and cheese mixture, then top it with buttery corn flakes for crunch. The classic cheesy potato casserole, sometimes called funeral potatoes.

Frozen hash browns get layered with a creamy mix of soup, sour cream, milk, and green onions, plus plenty of cheese.
The corn flake topping is the magic touch. Crushed corn flakes drizzled with melted butter bake into a golden, crunchy crust that plays beautifully against the rich, creamy potatoes underneath. Do not skip the butter drizzle, since that is what crisps them up.
Layering the cheese in the middle and on top means melty cheese in every bite, not just on the surface. You can assemble it ahead and refrigerate until baking time, which makes it a holiday lifesaver. Bake until bubbly and golden, and if the top browns too fast, tent it loosely with foil.

Ingredients
10 cups Mr Dell's Hash Browns
1 can Cream of Chicken
12 oz Sour Cream
1/4 cup + 2T Butter
1/2 cup Milk
1/2 cup Chopped Green Onions
2 cups Grated Cheddar Cheese
1 cup Crushed Corn Flakes
Directions
- Preheat oven to 375°
- Pour ¼ cup melted butter into 9×13 baking dish . Add 5 cups of frozen hash browns.
- In separate bowl, mix soup, sour cream, milk, and green onions. Pour ½ over hash browns. Sprinkle 1c cheese on top.
- Add remainder of hash browns and mixture on top.
- Sprinkle on remaining cheese, then cover with corn flakes.
- Drizzle 2T melted butter on top.
- Bake for 55 minutes.
