Directions
Preheat the oven to 350℉ (180℃).
Add butter and powdered sugar in a large bowl with an electric mixer, cream until light, fluffy and smooth.
Beat in egg and vanilla extract until well blended.
In a medium bowl, stir together the flour, baking soda and cream of tartar.
Beat into the butter mixture in low speed or stir with a wooden spatula until just incorporated.
Divide dough into three equal portions and shape into balls.
On a lightly floured working surface or cutting board, working with 1 ball at a time, roll out dough to ¼ inch thick.
Use a knife to cut dough into about 2 inches high by 3 inches long rectangles. (6 x 8 cm).
Arrange rectangles on an ungreased cookie sheet, 2 inches apart.
Bake for about 10 minutes or until lightly browned.
Let cool completely on the wire racks.
Use green, white and orange icing to decorate the cookies to Irish flag looking.
Once the icing is all set, store the cookies at an air-tight container.
