30 minThese Funfetti cookies are what happens when birthday cake meets cookie jar convenience, and honestly, it’s a match made in sprinkle heaven.
Start with a boxed cake mix (no shame in that game), add a little flour for structure, olive oil for richness, and egg whites to keep them light.
The rainbow sprinkles bake right into the dough, creating little pops of color and sweetness.
Top each cooled cookie with a swipe of vanilla frosting and more sprinkles for maximum party vibes.
Kitchen Tips
- Chill the dough for 15 minutes if it’s too sticky to handle, makes shaping easier
- Dip the glass bottom in flour between each cookie to prevent sticking when flattening
- Let cookies cool completely before frosting or you’ll have a melty mess on your hands
