Easy grilled salmon over a bed of lemon-dressed radicchio, finished with a fresh raw tomato sauce. A light, fast, summery main where bitter greens and bright tomato cut the richness of the fish.

This dish sets salmon fillets, grilled fast over high heat, on a bed of radicchio tossed with extra virgin olive oil, lemon, salt, and pepper. The leaf’s pleasant bitterness and that hit of lemon are the ideal counterpoint to the rich, fatty fish.
The grilling is quick on purpose, about four minutes a side over high heat for salmon that stays medium-rare and juicy. Push it longer and it dries out, so keep an eye on it.
Laying the hot fillets over the dressed radicchio softens the leaves just slightly, and a final pour of fresh, raw tomato sauce brings a cool, bright tang. The whole thing comes together in half an hour, which makes it as good for a weeknight as for guests.

Directions
Preheat grill, barbecue or broiler.
In a large mixing bowl toss the cleaned racially with 3 ounces of the extra virgin olive oil, lemon juice, salt and pepper.
Arrange racially on four serving plates as your base for the salmon.
Brush the remaining olive oil over salmon the fillets.
Season fillets with salt.
Grill over high heat about 4 minutes per side ( for medium rare salmon ).
Remove from grill, and place filets over racially.
Pour ½ cup raw tomato sauce over salmon and serve immediately.
