1 hrsDown in the Delta, they know a thing or two about sauces, and this one’s a keeper.
Mayo meets ketchup and chili sauce, then gets punched up with Worcestershire, mustard, garlic, grated onion, and a hit of hot sauce. A squeeze of lemon juice brightens the whole thing and keeps it from tasting heavy.
No cooking involved. Just stir it all together in a bowl, cover it up, and let it chill so the flavors can get acquainted.
Dunk fried shrimp in it, spread it on po’boys, or set it out next to a platter of fried catfish. It goes with just about everything.
Kitchen Tips
- Grate the onion on a box grater so it nearly dissolves into the sauce. Chopped onion chunks would throw off the smooth texture
- Let the sauce chill for at least an hour before serving. The flavors meld and mellow considerably
- Keeps well in the fridge for up to a week, and honestly it gets better after a day or two
