Ingredients

1 ½ cups crab meat
drained, all bits of shell removed
1 tablespoon lime juice
fresh
½ teaspoon lime zest
grated
1 each scallions, spring or green onions
2 tablespoons parsley leaves
minced
1 teaspoon worcestershire sauce
1 teaspoon prepared mustard
hot, prepared
1 x red hot pepper sauce
to taste

2 tablespoons butter
unsalted, melted
16 each melba rounds

½ cup swiss cheese
grated

Directions

Preheat broiler.

Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce.

Taste and adjust seasonings.

Brush melted butter on toast rounds and arrange in a single layerin a broiler pan.

Top each round with a portion of the crab mixture, then with 1½ teaspoon cheese.

Broil until cheese is melted and crab mixture is hot.
