In small skillet, sauté bacon until crisp.

Remove bacon from skillet; blot with paper towels and crumble.

Set aside.

Discard all but 2 tablespoons bacon drippings from skillet.

Rob

What do you do with the tomatoes and the bacon fat. Thanks.

zhangbo

2 tablespoons of bacon drippings is reserved into skillet, as the direction says, "add onion to skillet; sauté in the reserved 2 tablespoons bacon drippings; until tender but not brown", and in ingredients list, tomato is change into potato. Enjoy!
