60 minIf you’ve never baked with Coca Cola, buckle up. This classic Southern sheet cake uses cola in both the batter and the icing, creating a moist, fudgy crumb that’s unlike any other chocolate cake you’ve tried.
The carbonation gives the batter a light lift while the cola’s caramel notes deepen the cocoa flavor. Miniature marshmallows float to the top during baking and melt into gooey pockets throughout.
Pour the warm cocoa-cola icing right over the hot cake so it seeps into every inch. The result is dense, sticky, and absolutely addictive.
Kitchen Tips
- Pour the icing on while the cake is still warm so it absorbs and creates a fudgy top layer
- Toss a cup of toasted chopped pecans into the icing for crunch and nutty depth
- Don’t overmix the thin batter; the marshmallows are supposed to rise to the surface
