Chopped Lemon and Avocado Kale Salad

 

Wonderfully fresh kale salad that is so good, even my father enjoyed it-- which is saying A LOT.

Ingredients

4 cup kale
finely chopped
½ avocados

2 tablespoons olive oil, extra-virgin
1 tablespoon lemon juice
½ cup cherries, dried

½ cup almonds
slivers
*
2 tablespoons Parmesan cheese
kosher salt
to taste

black pepper
to taste

Directions

In a food processor, combine the avocado, olive oil, and lemon juice and blend until smooth.

In a medium bowl, massage the avocado mixture into the kale for about 5 minutes, until kale feels soft.

Add dried cherries, toasted almonds, parmesan, salt, and pepper. Toss the salad together and serve.

Love this salsa! Sounds so nutrition dense as well as delicious. Will have to give it a go, and now need to add all these ingredients on my shopping list. Thanks for sharing it :)
