Chicken Piccata Sauce


Simple and easy sauce to spoon over Chicken ... best served over baked or fried cutlets that have been prepared by first dusting with flour, dipped in beaten egg, and rolled in either Italian seasoned crumbs or Panko bread crumbs.









Trans-fat Free, Low Carb, Sodium-Free, Low Sodium


2 tablespoons butter, unsalted
½ cup white wine
1 teaspoon capers
¼ cup lemon juice


Melt butter in small pot on low flame; add wine, juice and capers, and simmer while stirring continually for 1 to 2 minutes; remove from flame and season with salt and pepper to taste; pour over cooked chicken.

optional: remove skin from a small crushed tomato and add to pot and simmer with other ingredients giving sauce an extra depth of flavor; add'l nutrition values for 2oz of crushed tomato: 19 calories, 4 carbs, 1g fiber, 3g sugar, 1g protein, 145 vit A, 9mg vit C, 19mg calcium, 1mg iron.
