Ingredients

1 cup water
¼ cup vinegar
10 each peppercorns

1 each thyme sprigs

1 each garlic cloves
1 tablespoon brown sugar
1 cup red wine
dry

¼ cup vegetable oil
5 each juniper berries

3 each bay leaves
*
1 x nutmeg
grated
*
1 x red hot pepper sauce
*

Directions

Combine ingredients in a non-metal bowl.

Enough for 10 chops or 5 large steaks.

Cover and marinade 2 days or longer. Turn daily.

The strained marinade can be used as a BBQ baste or incorporated into gravies and sauces afterwards.
