It's hard to resist this delicious and cheesy grilled cheese that's made with caramelized onion, basil pesto, sun-dried tomatoes and Swiss cheese.

Ingredients

Directions

Heat a non-stick skillet over medium heat.

Spread two slices with equal amounts of basil pesto, sun-dried tomatoes, black olives, and red onion jam (that you made in advance), sprinkle with a few grinding of fresh black pepper if desired, and top with two slices of Swiss cheese on each slice of bread.

Top with the remaining slices of bread to form a sandwich.

Spread the butter or brush the olive oil on the outside of the sandwiches.

Place the sandwiches in the preheated hot pan and grill for about 4 minutes, pressing down occasionally, until crispy and golden.

Flip and grill for another 4 minutes, or until crispy and golden.

Serve warm.

Absolutely to die for. Made this grilled cheese for dinner yesterday, and it was so good. We still had some caramelized onion left from French Onion Grilled Cheese recipe (see link below) we made a few days ago, then I made up this recipe by using up the leftover caramelized onion, basil pesto, sun-dried tomatoes, some chopped black olives and slices of Swiss cheese that we had in the fridge. I used olive oil to grill the sandwiches in a medium nonstick skillet, and the cheese was nicely melted and oozing out, the combination of these ingredients was so good. Nicely browned and crispy sandwich with cheesy and flavorful filling, seriously delicious!!
