Nothing is quicker and easier than a delicious grilled cheese. Adding caramelized mushrooms into the cheese gives this grilled cheese extra yumminess.

Ingredients

1 tablespoon olive oil
or butter
1 onions
chopped
½ pound mushrooms, button
or cremini, sliced
1 clove garlic
or as needed, crushed
½ teaspoon italian seasoning
dried

3 tablespoons stock
or wine
salt and black pepper
to taste

2 tablespoons parsley leaves
freshly chopped
1 cup swiss cheese
or any melting cheese

2 tablespoons Parmesan cheese
4 slices bread
white or whole wheat
butter, unsalted
for cooking, as needed

Directions

Heat the oil in a medium nontsick skillet over medium heat.

Stir in the onion, stirring, and cook until brown, about 8 minutes.

Stir in the garlic and Italian herb mix, and cook until fragrant, 40 seconds to 1 minute.

Throw in the mushrooms and cook until caramelized and become golden brown, 13 to 16 minutes.

Pour in the broth or wine, simmer until most of the liquid has evaporated.

Season with salt and pepper to taste and remove from heat.

Add the cheese into the mushrooms. Stir until well combined.

Butter one side of each slice of bread and place 2 slices in the pan buttered side down.

Place ½ of the mushroom and cheese mixture on top, then top with the remaining slices of bread with the buttered side up.

Cook until the cheese melts and both sides of bread is golden brown, about 3 minutes each side.

Serve warm with tomato soup if desired.
