A Beef Cheese Ball is the cocktail-party staple your grandmother served at every holiday open house. Cream cheese, horseradish, and chipped beef combine into a soft spread that gets shaped into a ball, rolled in more chipped beef, and chilled until firm. Serve with crackers, celery sticks, and let it disappear.

The chipped beef is doing double duty here. Half of it gets sautéed in butter and folded into the cream cheese mix; the other half coats the outside as a textured crust. The sauté step is the secret. Cooking the chipped beef briefly in butter softens the salty intensity and adds buttery flavor that raw chipped beef alone cannot deliver.

Cream cheese must be at room temperature for proper mixing. Cold cream cheese stays lumpy and resists incorporation, leaving you with white streaks in the ball. Plan ahead: take it out an hour before mixing.

Horseradish brings the sharp bite that separates this cheese ball from sweeter versions. Two teaspoons is the right amount for adults; reduce to half a teaspoon for kid-friendly versions.

Wrap in plastic and chill for at least four hours before serving. The flavors meld and the ball firms up enough to handle.

  • Use full-fat cream cheese, not whipped or low-fat. Lower fat versions are too soft to hold a ball shape.
  • Pat the chipped beef dry with paper towels before sautéing. Wet beef steams instead of browning in the butter.
  • Roll the ball on parchment for cleaner shaping. Plastic is for storage, not for shaping.
  • Make a day ahead. The spread tastes better with overnight chilling.

  • Add two tablespoons of finely chopped chives or green onion for color and bite.
  • Substitute pastrami or smoked salmon for chipped beef for a twist on the classic.
  • Mix in a teaspoon of Worcestershire sauce for additional umami depth.

Directions
