Christmas Crawfish Stuffing

Ingredients

8 ounce cornbread stuffing mix
1/4 pound butter
1 cup celery chopped
1/2 cup sweet bell pepper
1/3 cup white onion
1 pound crawfish chop coarse
1 teaspoon salt
2 teaspoon creole seasoning
1/2 cup scallions, spring or green onions
1 can water chestnuts
1 cup water

Directions

Melt butter and sauté celery, bell pepper and onion until limp.

Add the crawfish tails, sprinkle with salt and creole seasoning.

Saute for 5 minutes.

Add the stuffing, water chestnuts, green onion and water.

Mix well.

Spoon into a buttered dish or turkey cavity.

Bake uncovered at 350F for 25 minutes.

Canadian Cipate (C-Pout)

Haven't made this one yet, but ma belle-soeur (my sister-in-law) makes an outstanding cipate every Christmas Eve. I think you'll need more than one 9 inch pie crust for all the layers.
