The guacamole dressing is creamy and tasty, the combination of lettuce, cheeses, tomato, scallions and corn chips is full of flavors and texture, and it's tossed with the creamy dressing. It's not easy to resist this mouth-watering salad.

These chile cheese stuffed tomatoes were deliciously cheesy and juicy. We served these tomatoes with a salad and red wine mushroom sauce, yum!!! Definitely a keeper!

Quite tasty and filling. I used black bean instead of pinto beans, I also squeezed half of the lime juice into the dressing, and I omitted the tomatoes that I didn't have on hand. I did think a ripe yet juice tomatoes would add more great flavor. Served it on a bed of lettuce and home-baked tortilla chips.
