Eggplant Recipes

Cheesy, oozy and juicy casserole. A delicious way to use up the eggplant without putting too many calories on you.

We loved it and used it in the Turkey Lasagna recipe.

This is actually fairly easy to make, the only time consuming part was peeling the eggplant and chopping vegetables.

This would probably be really good with cauliflower or zucchini instead of eggplant.
