25 minThese are the kind of cookies that disappear from the cookie jar without anyone quite knowing where they went. Small, round, and coated in a crunchy layer of toasted wheat germ, they have a subtle nuttiness that’s completely addictive.
Orange zest lifts the whole thing with a citrusy spark that keeps them from tasting like health food. They’re lightly sweet, pleasantly crunchy, and just the right size for grabbing a couple (or five) with your afternoon coffee.
Chill the dough before rolling so it holds its shape in the oven and bakes up with clean, round edges.
Chef Tips
- Toast the wheat germ in a dry skillet for a couple minutes before using; it deepens the flavor dramatically
- Chill the dough for at least 30 minutes so the balls hold their round shape while baking
- Store in an airtight container at room temperature for up to a week; the wheat germ coating stays crunchy
