The method here is straight muffin technique: sift the dry ingredients, stir in the apple, sugar, and nuts, then fold in the wet ingredients until just combined. That “just combined” part is the single most important instruction. Overmix muffin batter and you get tough, dense pucks with tunnels running through them. A few lumps in the batter are a sign you’re doing it right.
Folding in the bran flakes last keeps them from getting fully saturated. They soften slightly during baking but retain enough crunch to add a textural layer you can feel in every bite. Filling each cup about two-thirds full leaves room for the muffins to dome without overflowing.
