Shredded fresh apple and crunchy bran flakes give these muffins a texture that’s more interesting than your average breakfast bake. Warm spices, walnuts, brown sugar, and apple juice double down on the fruit flavor from every angle.

The method here is straight muffin technique: sift the dry ingredients, stir in the apple, sugar, and nuts, then fold in the wet ingredients until just combined. That “just combined” part is the single most important instruction. Overmix muffin batter and you get tough, dense pucks with tunnels running through them. A few lumps in the batter are a sign you’re doing it right.

Folding in the bran flakes last keeps them from getting fully saturated. They soften slightly during baking but retain enough crunch to add a textural layer you can feel in every bite. Filling each cup about two-thirds full leaves room for the muffins to dome without overflowing.

Kitchen Tips

  • Shred the apple on the large holes of a box grater. Fine shredding turns to mush. You want visible apple pieces that hold their shape through baking.

Directions

Sift together flour, baking powder, salt and spices.

Stir in apple, brown sugar and nuts.

In a separate bowl, combine eggs, juice and butter.

Stir into apple mixture just until blended.

Fold in bran flakes.

Pour into oiled muffin pans, filling each cup about ⅔ full.

Bake at 400℉ (200℃) for 15 to 20 minutes.
