South African curried lamb kebabs marinated overnight in a sweet-tangy sauce of chutney, curry powder, vinegar, and lemon leaves. Grilled and served with rice and chutney.

45 minSosaties are the pride of the South African braai, and once you taste them you’ll understand why.
Cubes of mutton marinate overnight in a curry-chutney sauce sweetened with sugar and sharpened with vinegar, infused by lemon leaves that lend a floral, citrusy perfume. Thread them on skewers the next day, alternating lean and fat, and grill them over hot coals.
The marinade gets boiled down and thickened with a touch of corn flour into a glossy sauce that’s spooned over the finished skewers.
Serve over rice with extra chutney on the side.
Kitchen Tips
- Alternate lean and fat cubes on the skewers. The fat bastes the lean meat as it melts over the fire, keeping everything juicy.
- Overnight marinating is essential. The curry-chutney mixture needs time to penetrate the meat fully.
- These can also be fried in larger chunks without skewers if you don’t have a grill going.
- Lamb works as a substitute for mutton if you can’t source it. The flavor is milder but still carries the spiced marinade well.

Cut the meat into cubes of about 1½ inches of fat and lean.
Put into a basin and season with salt and pepper.
Lightly brown the onion in the butter then add the curry powder, sugar, chutney and vinegar.
Simmer for 5 minutes then pour the sauce over the meat, adding the lemon leaves.
Leave in the sauce overnight, then arrange the meat on skewers, alternating the lean and the fat.
Drain out of the sauce and grill over a clear fire.
Bring the sauce in which the meat was marinated to the boil and thicken with a little corn flour that has been mixed to a paste with cold water.
Pour this over the soesaties and serve very hot with rice and additional chutney if desired.
Soesaties may be fried, but in that case they should be cut into somewhat larger pieces and should not be placed on skewers.
