Rosemary chicken steamed in parchment hearts in the microwave with snow peas, red pepper, and lemon. A fast, healthy en papillote dinner that locks in moisture and aroma in about 6 minutes.

25 minCooking chicken breast in a sealed parchment packet is a French trick (en papillote), but here it goes in the microwave instead of the oven, so dinner is ready in about six minutes.
The sealed parchment is what makes it work. As the chicken cooks, the trapped steam keeps the lean breast moist and tender, while the rosemary, lemon, and vegetables perfume the meat from the inside. No added fat needed.
Snow peas and strips of red bell pepper steam right alongside, staying crisp-tender and bright.
Crimp and twist the parchment edges tightly so no steam escapes; a loose packet lets the chicken dry out. When it’s done, just snip open the tops at the table for a little burst of fragrant rosemary-lemon steam. Pull out the woody rosemary sprigs before eating. It’s a light, fresh, nearly hands-off meal.

Ingredients
Directions
Cut two 12 inch square pieces of parchment.
Fold in half, creasing firmly.
Trim each into a heart shape; lightly coat one side of each piece with cooking spray.
Place a chicken breast half on one half of a parchment heart near crease.
Sprinkle with salt.
Arrange half of peas, bell pepper and rosemary over chicken.
Sprinkle with half of lemon juice.
Fold over remaining half of heart.
Starting with rounded edge of heart, pleat and crimp edges together to seal.
Twist end tightly to seal.
Repeat procedure.
Place bags on a microwave safe dish.
Microwave at high 5 to 6 min.
To serve cut open tops of parchment.
Discard rosemary sprigs.
Garnish with fresh sprigs if desired.
