These raisin oatmeal brownies sit somewhere between a classic fudgy brownie and an oatmeal cookie bar. Melted semi-sweet chocolate chips and butter form the rich base, while quick-cooking oats give the texture a pleasantly chewy, almost granola-like bite. Raisins plump up during baking and add little bursts of fruity sweetness throughout.

The oats pull double duty here. A couple tablespoons get sprinkled on the bottom of the greased pan before the batter goes in. This creates a slightly crisp, textured base that keeps the brownies from sticking and adds crunch to the bottom of every bar. The rest get stirred into the batter itself.

Brown sugar instead of white gives these a deeper, more caramel-like sweetness that pairs naturally with the oats and chocolate. Melt the chocolate and butter together over low heat, stirring constantly so the chocolate doesn’t seize or burn. Once it’s smooth, the sugar blends in easily off the heat.

Pro Tips

  • Low heat is a must when melting the chocolate. High heat causes chocolate to seize into a grainy clump that won’t smooth out.
  • Don’t overbake. Pull them at 30 minutes when a toothpick comes out with moist crumbs, not clean. They firm up significantly as they cool.
  • Pack the brown sugar firmly for accurate measuring. Loosely scooped brown sugar means less sweetness and a drier brownie.
  • Let them cool completely in the pan before cutting. Warm brownies crumble and fall apart.

Directions

Sprinkle 2 tablespoons of the oats over bottom of greased 9 X 9 X 2-inch baking pan; set aside.

In saucepan melt chocolate and butter over low heat; stir constantly.

Remove from heat; blend in sugar.

Beat in eggs and vanilla.

Stir together flour, remaining oats, raisins, soda and salt; stir into chocolate mixture.

Spoon into prepared pan.

Bake at 325 degrees for about 30 minutes.

Cool; cut into bars.
