| 6 | cups | water | |
| 1 1/4 | cups | lentils | dried, rinsed and sorted |
| 28 | ounces | tomatoes, canned with juice | cut up |
| 3 | each | carrots | sliced |
| 2 | each | celery stalks | |
| 1/4 | cup | scallions, spring or green onions | chopped |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | garlic powder | |
| 1/2 | teaspoon | oregano | dried |
| 1/8 | teaspoon | black pepper | |
| 12 | ounces | pork sausage | bulk, cooked, drained |
| 2 | tablespoons | parsley leaves | fresh, chopped |
In a Dutch oven, bring ham bone and water to a boil.
Reduce heat; cover and simmer for 1 1/2 hours.
Remove ham bone.
To broth, add lentils, tomatoes, carrots, celery, onions and seasonings; bring to a boil.
Reduce heat; cover and simmer for 30-40 minutes or until lentils and vegetables are tender.
Meanwhile, remove ham from bone; coarsely chop.
Add ham, sausage and parsely to soup; heat through.
Excellent! Used the left over bone from our spiral sliced xmas honey ham. Did not use the sausage. Very easy and tasty!

Excellent! When I was making the recipe though, I found that there didn't seem to be enough oats, so I doubled the measurement. It turned out great. JB
