| 7 | pounds | herrings | fillets, fresh, skins left on, cut into 1 inch pieces |
| 2 1/2 | quarts | vinegar | |
| 6 | each | cinnamon sticks | |
| 1/4 | cup | allspice | whole |
| 1/4 | cup | mace | leaves |
| 1/4 | cup | black peppercorns | |
| 1/4 | cup | cloves | whole |
| 3 | large | onions | sliced thinly |
| 1 3/4 | cups | sugar |
Combine all ingredients except herring and boil for 15 minutes.
Add herring, let simmer for 15 minutes. Let cool in liquid; refrigerate.
