Ingredients

2 cups water boiling
1 package jello lemon-flavoured
2 cups ice cubes divided
1 package jello orange-flavoured
1 can pineapple crushed
2 cups miniature marshmallows
3 large bananas sliced
1/2 cup cheddar cheese finely shredded
Salad dressing
1 cup pineapple juice
1/2 cup sugar
1 each egg beaten
1 tablespoon margarine, non-fat
1 cup heavy whipping cream
2 tablespoons cornstarch

Directions

In a mixing bowl, combine 1 c water and lemon jello.

Add 1 c ice cubes, stirring until melted. Add pineapple.

Pour into a 13x9x2 inch baking pan. refrigerate until set. Repeat with orange jello, with remaining ice and water.

Stir in marshmallows. Pour over lemon layer; refrigerate until set.

For dressing, combine pineapple juice, sugar egg, cornstarch and butter in a pan.

Cook over med heat stirring constsntly until thick.

Cover and refrigerate overnight. Next day, arrange bananas with whipped cream over jello.

Combine dressng with whipped cream; spread over bananas, Sprinkle with cheese.

Precious Persimmon Muffins

If you want a persimmon muffin that doesn't taste like persimmon, this recipe is for you. The taste is very good, but more like an apple muffin. I was disappointed that the muffins were flat on top instead of puffed, but I suspect that the lack of baking powder in addition to the baking soda is to blame. Adding the baking soda directly to the persimmon puree caused the mixture to set up like jelly.
