Flatten each slice with a rolling pin, spread on a pizza-y filling of mozzarella, tomato sauce, black olives, and Italian seasoning, then roll up jelly-roll style. The butter brush and chill step before baking is what turns them from soft to golden-crisp in the oven.
The make-ahead angle is the real selling point. Assembled rolls hold in the fridge for hours (overnight even) and bake off in 12 to 15 minutes when you need them. This makes them genuinely useful for parties, lunchboxes, or quick suppers.
The bread choice matters. Plain white sandwich bread works best because it rolls without cracking and crisps evenly. Whole grain bread tears as you roll, and crusty artisan breads refuse to flatten at all.

Directions
Cut crusts from bread and roll out each slice with a rolling pin.
Combine remaining ingredients except butter and stir to blend well.
Spread each bread slice with some of the mixture and roll up jelly roll fashion (fasten with a toothpick if necessary).
Brush each roll with melted butter.
Put on a baking sheet and chill until serving time.
When ready to serve, put roll ups in a preheated- heated 400 degree oven for 12 to 15 minutes.
Serve hot with chilled soup.
