| 6 | large | eggs | hard, cooked |
| 2 | tablespoons | mayonnaise | |
| 2 | tablespoons | prepared mustard | |
| 1 | each | shallot | minced |
| 1 | x | salt | to taste |
| 1 | x | black pepper | to taste |
| 1 | x | cayenne pepper | or paprika, as needed |
| 1 | x | chives | minced, as needed |
Boil the eggs, allow them to cool, and then cut them in half lengthwise.
Scoop out the yolks and mash with the mayo, mustard, shallot, salt and pepper.
Place a scoop of the mixture in each of the twelve egg white halves.
Sprinkle with chives and a generous amount of cayenne, or if you're not a little devil, use paprika instead.

Good substitute for baked potatoes!! I even used frozen cubed potatoes to make it easier.
